PEI Potato and Sausage Soup | A hearty and delicious soup that can be prepared and frozen. Very the soup's favour
by experimenting with different sausages. Serves 6. |
| | Ingredients | | 2 tbsp | olive oil | 25ml | | 3/4 cup | diced carrots | 175ml | | 3/4 cup | diced celery | 175ml | | 2 cups | sliced leeks | 500ml | | 1/4 cup | diced red pepper | 50ml | | 2 tbsp | flour | 25ml | | 4 cups | chicken stock | 1 L | | 2 cups | diced peel PEI Potatoes | 500ml | | 2-3 | Italian sausages, sliced | 2-3 | | 1/4 tsp | salt | 1ml | | 1/4 tsp | dried marjoram | 1ml |

| In a large saucepan, heat oil. Saute carrots, celery, leeks and red pepper until softened, but not browned, stirring occasionally.
Add flour, stirring for 2 minutes. Blend in chicken stock; add potatoes and simmer until vegetables are tender.
Saute sausages until lightly browned and cooked. Add sausages, salt and marjoram to soup. Simmer until hot.
