PEI Potato and Sausage Soup

A hearty and delicious soup that can be prepared and frozen. Very the soup's favour by experimenting with different sausages.
Serves 6.


PEI Potato and Sausage Soup
Ingredients
2 tbspolive oil25ml
3/4 cupdiced carrots175ml
3/4 cupdiced celery175ml
2 cupssliced leeks500ml
1/4 cupdiced red pepper50ml
2 tbspflour25ml
4 cupschicken stock1 L
2 cupsdiced peel PEI Potatoes500ml
2-3Italian sausages, sliced2-3
1/4 tspsalt1ml
1/4 tspdried marjoram1ml


In a large saucepan, heat oil. Saute carrots, celery, leeks and red pepper until softened, but not browned, stirring occasionally. Add flour, stirring for 2 minutes. Blend in chicken stock; add potatoes and simmer until vegetables are tender. Saute sausages until lightly browned and cooked. Add sausages, salt and marjoram to soup. Simmer until hot.
