Meal in a PEI Potato | A wonderful way to enjoy a PEI baked potato, meat and veggies.
Makes 4 servings. |
| | Ingredients | | 4 | baked PEI Russet potatoes | 4 | | 2 cups | sliced mushrooms | 500ml | | 2 tbsp | butter | 25ml | | 1/4 cup | finely diced celery | 50ml | | 1/2 cup | chopped onion | 125ml | | 1/2 cup | coarsely chopped red pepper | 125ml | | 1 | garlic clove, minced | 1 | | 1 lb | sirloin steak, thinly sliced | 450g | | 1/2 cup | snow peas or broccoli florets | 125ml | | 2 tbsp | apple juice or white wine or beef stock | 25ml | | 1 tsp | cornstarch | 5ml | | 2 tbsp | water | 25ml |

| Saute mushrooms, celery, onions, red pepper and garlic in butter in large frying pan, 2-3 minutes.
Stir in steak and saute until tender. Add snow peas or broccoli. Stir and cook
2 minutes; add remaining ingredients. Cook and stir until heated. Cut baked potato
in quarters, lengthwise. Spoon vegetables and meat over potatoes.
