Saucy Topped Bakers

Spoon luscious cheese sauce, laden with chunks of ham and veggies, over fluffy baked potatoes. A comfort meal to dispel the chill of winter.
Makes 4 servings.


Saucy Topped Bakers
Ingredients
4PEI potatoes, baked4
1 1/2 cupscubed zucchini, broccoli forets or frozen peas375ml
1 tbspbutter 15ml
2 tbspgreen onion, sliced25ml
1garlic clove, minced1
1 tbspflour 15ml
1/2 tspdry mustard2ml
1 cupmilk250ml
1 cupKraft Swiss Cheese, grated250ml
1 1/2 cupscubed, cooked ham or chicken375ml


Microwave zucchini in 2 tbsp (25ml) water on HIGH 1-2 minutes; drain. In 1 1/2 qt (1.5L) microwaveable dish, melt butter on HIGH for 30 seconds. Add green onion and garlic; microwave on HIGH for 1 minute. Stir in flour, mustard, salt, pepper; add milk gradually. Microwave on HIGH, 2-4 minutes, stirring once until sauce is thickened. Stir in cheese, ham and vegetables. Spoon over opened, baked potatoes.
