PEI Potato Onion Bake

PEI Potato Onion Bake
Ingredients
5medium PEI Potatoes, sliced thin5
2onions, sliced in thin rings2
2garlic cloves, crushed2
1 1/2 tbspsoft margarine22 ml
1 1/4 cupslow-salt vegetable or chicken stock300 ml
to tasteSalt and pepper to taste
to garnishparsleyto garnish


Preheat oven to 350°F (180°C).Lightly grease a 2 L (1.8 quart) ovenproof dish and line it with 1/3 of the sliced potatoes. Layer with 1/2 the sliced onions and sprinkle with 1/2 the garlic. Season with salt and pepper, and repeat layers and seasonings.Press the vegetables down into the dish and dot with margarine. Pour the stock over and bake in the oven for 1 hour and 15 minutes. Garnish with parsley. To shorten cooking time, mircowave on high about 10 minutes, and then finish baking in the oven for 30 minutes, until potatoes are tender. Serves 6.
