Kids and Carbs Easy Potato Samosas | | A simplified version of an Indian snack food, adapted for younger palates.

Makes 8 samosas (four servings of 2)

| | Ingredients | | 2 c. | Mashed potatoes | 500 ml | | 2 tsp. | Vegetable oil | 10 ml | | 2 | Green onions, thinly sliced | 2 | | 1/4 tsp. | Ground ginger (optional) | 1 ml | | 1/2 tsp. | Salt | 2 ml | | 1/4 tsp. | Ground cumin (optional) | 1 ml | | pinch | Cayenne pepper | pinch | | 1/2 c. | Frozen mixed vegetables | 125 ml | | 2 tbsp. | Plain yogurt | 30 ml | | squeeze | Lemon juice | squeeze | | 8 | Small flour tortillas | 8 | | 1 | Small plum tomato, chopped (optional) | 1 |

| 1. Peel and dice potatoes into 1/2 inch (1 cm) pieces. Place in a large frying pan. cover with cold salted water and bring to boil. Cook, covered, 6 to 9 minutes until potatoes are very tender. Drain well and turn into a bowl. Mash, but not too thoroughly.
2. Heat oil in same pan over medium heat. Add onion and seasonings. Cook 1 minute, then add frozen vegetables and 2 tbsp. (30 ml) water. Stir till hot. Return potato mixture to pan and heat. Add yogurt and lemon juice.
3. Place 1/4 cup (50 ml) of the warm potato mixture on one end of tortilla. Sprinkle with tomato (optional), then roll and fold to enclose filling in square packets. Cut squares in half diagonally to make open-sided triangles. Serve with dipping sauce like tamarind and plum.
