Spicy Lemon PEI Potatoes | | Preparation and cooking time: 30 minutes |
| | Ingredients | | 2 tbsp | olive oil | 25 ml | | 2 | garlic cloves, crushed | 2 | | 1 tsp | ground cumin | 5 ml | | 1 tsp | ground coriander | 5 ml | | 5 | medium PEI potatoes, cut bite-sized | 5 | | 1 tsp | lemon rind, finely grated | 5 ml | | 1/4 cup | lemon juice | 50 ml | | 1/2 cup | vegetable stock | 125 ml | | 1 tbsp | cilantro, chopped | 15 ml | | to taste | salt and pepper | to taste |

| Heat oil, sauté onion for 3 minutes. Add garlic and cook 30 seconds. Mix in spices, stir and cook 1 minute. Add potatoes and stir to coat with spices. Add lemon juice, rind, stock and salt and pepper to taste. Cook over medium heat 15-20 minutes, stirring ocasionally, until potatoes are tender. Garnish with cilantro. Serves 4. |
