
Serves 4-6
- 2 Lb Small Yellow Potatoes (20-25 potatoes)
- 1Lb Thick Cut Smoked Bacon
Seasoning Mix: - 1Tbsp Pepper
- 1Tbsp Sea Salt
- 1/2 Tbsp Smoked Paprika
Dip: - 1 Cup Sour Cream
- 2 Tbsp Fresh Dill
Preheat oven to 400 F. In a small dish combine the Seasoning Mix; Pepper, Sea Salt and Smoked Paprika. Once mixed, set aside.
Wash and pat dry the Small Yellow PEI Potatoes. Wrap one piece of thick cut smoked bacon around each potato, secure with wooden toothpick and place on a shallow cooking pan or cookie sheet. Sprinkle the seasoning mix over each bacon bundled potato.
Bake in the oven for 30-40 minutes until bacon is cooked through and potatoes can easily be pierced with a fork. Use tongs to remove the bundles, transfer to a new cookie sheet and place back in the oven to Broil on high for 2 minutes. This will add some extra crispiness to the bacon if desired. Remove and let cool slightly.
Combine the Fresh Dill with the Sour Cream for the dip.
Place the Bacon Bundled PEI Potato Bites on a festive tray with the dip, serve and enjoy!

Swap the Fresh Dill for Chives for a variation on the dip.
