Pizza Baked PEI Potatoes

Prep Time & Yield


  • 2 Baked Russet Potatoes
  • 4 Tbsp of Tomato Sauce
  • 2 C Mozzarella Cheese
  • 1/2 C of Sliced Pepperoni
  • Salt & Pepper
  • Oregano


Slice the pre-Baked Potatoes in half lengthwise, scoop a small well into the centre of the potato, season lightly with Salt and Pepper. Ladle a spoonful of Tomato Sauce onto each halved potato, sprinkle with Oregano, 1/4 C of Mozzarella on each potato, and add slices of Pepperoni. Bake in oven preheated to 400ºF for 15 minutes, or until cheese is melted and potatoes are warm. Cool slightly before serving.
