PEI Potato Mediterranean Salad

A colourful, nutritious salad for summer barbeques or family potlucks!

4 medium PEI Potatoes
1 medium Red Onion, finely chopped
19 oz can (540 ml) Chickpeas, drained and rinsed
2 medium Tomatoes, chopped
1/4 cup (50 ml) Fresh Lime or Lemon Juice
1/2 cup (125 ml) Fresh Coriander or Parsley, finely chopped
2 cloves Garlic, minced
1/2 tsp (2 ml) Coriander, ground
1/2 tsp (2 ml) Cumin, ground
1/4 tsp (1 ml) Salt
1/4 tsp (1 ml) Cayenne
1/4 tsp (1ml) Sugar



Cook washed potatoes in about 1 inch (2.5 cm) of lightly salted boiling water, until fork tender, about 20-25 minutes.

Peel and chop into 1/2 inch (1 cm) cubes. Combine potatoes with remaining ingredients and toss.

Set aside at room temperature for 30 minutes to allow flavors to blend. Refrigerate. Serves 6
