Helpful hints to food service operators on including more PEI Potatoes in your menus can be seen here (PDF). 

Count potatoes (50 pound boxes of uniformly sized, washed, baking potatoes), large (chef) potatoes, small and creamer potatoes are available from PEI.

Count refers to the number of potatoes in a 50 pound carton. The higher the count size, the more potatoes. Russets or long type potatoes (baking potatoes) are packed by count.
