Spicy Lemon PEI Potatoes

Makes a great side dish with fish!

Preparation and cooking time:  30 min

Serves 4

5 medium PEI Potatoes, cut bite-sized
2 tbsp (25 ml) Olive Oil
2 cloves Garlic, crushed
1 tsp (5 ml) Cumin, ground
1 tsp (5 ml) Coriander, ground
1 tsp (5 ml) Lemon rind, finely grated
1/4 cup (50 ml) lemon juice
1/2 cup (125 ml) Vegetable Stock
1 tbsp (15 ml) Cilantro, chopped
to taste Salt and Pepper



Heat oil, sauté onion for 3 minutes. Add garlic and cook 30 seconds. 

Mix in spices, stir and cook 1 minute. 

Add potatoes and stir to coat with spices. 

Add lemon juice, rind, stock and salt and pepper to taste. 

Cook over medium heat 15-20 minutes, stirring ocasionally, until potatoes are tender. 

Garnish with cilantro. Serves 4.
