Spicy Lemon PEI Potatoes
Makes a great side dish with fish!

Serves 4
Ingredients
5 medium | PEI Potatoes, cut bite-sized |
2 tbsp (25 ml) | Olive Oil |
2 cloves | Garlic, crushed |
1 tsp (5 ml) | Cumin, ground |
1 tsp (5 ml) | Coriander, ground |
1 tsp (5 ml) | Lemon rind, finely grated |
1/4 cup (50 ml) | lemon juice |
1/2 cup (125 ml) | Vegetable Stock |
1 tbsp (15 ml) | Cilantro, chopped |
to taste | Salt and Pepper |
Directions
Heat oil, sauté onion for 3 minutes. Add garlic and cook 30 seconds.
Mix in spices, stir and cook 1 minute.
Add potatoes and stir to coat with spices.
Add lemon juice, rind, stock and salt and pepper to taste.
Cook over medium heat 15-20 minutes, stirring ocasionally, until potatoes are tender.
Garnish with cilantro. Serves 4.
